KAMQUAT DIGESTIF FOR CHINESE LUNAR NEW YEAR 2013

Well....the biggest Chinese community's celebration is around the corner now, i.e. Chinese Lunar New Year 2013, so I thought I share something relevant for the festive season.

As usual, kamquat and Chinese Lunar New Year are synonym and during this time of the year, you will see lots of kamquats at the market which to the Chinese, represents "Gold" or wealth luck.

Use the golden orange kamquats only

Therefore, with lots of kamquat available, why not make a drink great for the family reunion dinner or to be served to visiting guests? Let's drink to our great wealth with "Kamquat Digestif"....in Malaysia, the Chinese would shout out loud "Yummmmm Seng" as a toast to each other.

Ingredients needed:

1) A bottle of your favourite Vodka (if you drink), if not, a bottle of your favourite sparkling juice

2) Some sugar (if you use Vodka)

3) Some water to dissolve the sugar

4) Some kamquats, of course!

First, heat-up sauce pan with 1/2 cup of water, add sugar to your sweetness tolerance / preference then when the sugar has dissolved, lift up the sauce pan and let it cool to room temperature.

When the syrup has cooled down, pour in your Vodka into a decanter and add in the syrup as well.

Wash and cut your kamquats into halves (about 6 kamquats for 1 litre of decanter) and drop them into your decanter with the Vodka + syrup.

Close the lid of your decanter tightly and keep it refrigerated, preferable 1 - 3 weeks, depending on how patience you are for optimun kamquat "kick".  A day or two would do too but less "kick".

The same method applies to sparkling juice, except that you don't need to add the syrup because sparkling juice is already sweet (unless you want it to be a bit sweeter).

Serve the drink chilled!!
